Flash Fried Moroccan Chicken For 4 people 700g of boned chicken breast or thighs 1 teaspoon of dried crushed chillies 2 cloves of garlic finely chopped Juice of 1 lemon 4 tablespoons of olive oil 1 teaspoon of cinnamon 4 tablespoons of sultanas 4 tablespoons of pine nuts 1 tablespoon of fresh chopped mint Delicious served with couscous · Cut the chicken in to bite size pieces · Mix all the remaining ingredients together - except the fresh mint and one table spoon of olive oil. · Heat one table spoon of olive oil in a shallow pan · When hot, add the chicken and cook on a high heat until golden brown · Turn down the heat and add the remaining ingredients and cook gently for approx 10 mins · Season with salt and pepper if required · Add the fresh mint · Serve on a bed of couscous with all the juices
